Medita Chocolates is a boutique chocolatier based in the Dandenong Ranges south-east of Melbourne. All chocolates are handcrafted using the finest plant-based ingredients. Our ethos is creating delectable chocolates that can be enjoyed by everyone. Working from our studio in Cockatoo, we specialise in handcrafting fine chocolates perfect for gifts and sharing, but also very appealing to the solitary pleasure-seeker. We love sourcing our produce from local businesses and creating chocolates with pure plant-based ingredients. Universal appeal is very important to us therefore all our ganache-filled chocolates are vegan, gluten free, soy free, refined sugar free and are completely delicious. Catherine Hill is the founder of Medita Chocolates. She grew up in Emerald near the Yarra Valley, and her love of cooking and fresh produce began there, baking cakes for her family and friends. After completing her Bac. of Science, majoring in Botany, Catherine commenced her chef apprenticeship at Rockpool Bar & Grill and The Atlantic in Melbourne. Following her time in Melbourne, an opportunity arose to further her career in London at Restaurant Gordon Ramsay as a Pastry Chef. Over the next two years, Catherine honed her craft and love of desserts under the tutelage of Chef Patron Clare Smyth M.B.E. in the high-pressure, three Michelin star environment. Following her time at Restaurant Gordon Ramsay, Catherine continued her development, interning at numerous prestigious kitchens across Britain and France including Alain Ducasse at the Dorchester, London, Le Manior aux Quat'Saisons, Oxford, Mast Brothers Craft Chocolate Makers, Soho and the celebrated Pavillon Ledoyen, by Yannick Alléno in Paris. Equipped with a passion for high-end pastry and plant-based cuisine, Catherine has moved back to Melbourne with a vision to produce elegant boutique chocolates with a quality to match the acclaimed kitchens where she has developed her skills.
